EDIT : Thanks to Quanno and Segtendo who helped me with the problem of the .rel files !

So thanks to them that I've been able to put a final destination based stage over Shadow Moses, now, I'll try with Robzdablades stages, and I'll tell you how it goes !

EDIT2 : Sorry to say this like that but... IT FU***** WORKED !
I simply renamed my PAL .rel file as the stage I wanted to be replaced, and them I made the manipulation with the hex editor and everything went a lot better than expected !

libertyernie -> Thank you, I used the 75m .rel file, and that was the right one !^^
There is only Grand Stadium that doesn't work !:o

Wait, what? Hook me up with those .rels. I've never gotten any of Robz's stages working before using Stage Switcher.

Here's a quote from over at SmashBoards.

Well, Bero made a program called Stage Switcher.

You will need to get the .rels from the "module" folder of this disc rip of the PAL disc

You put the .rel of your choice in the "rel" folder, choose it as the base stage when you open the program, choose the stage you want it to be, and BOOM, you should get an edited rel in the "edited" folder.

I didn't used the Stage Switcher, I've made the .rel all by myself.
I used the st_donkey.rel as libertyernie  said, and there was only Grand Stadium that didn't worked.
