the names are called:

iron_plate is the outside

screen is the inside of the stage

You can do anything you like to the colors of iron_plate and screen thats the stages main colors

It seems like Brawlbox doesn't have support for editing the colors in MDL0, so you will have to export the color-file, open it in a hex-editor and edit the values, then re-insert the file.

A normal blue in hexadecimal is #0000FF
