In order to get high quality videos, you'd need to shell out a considerable amount of money, however. Or you can record from Dolphin, which has the capacity to put out 1080p quality, if I remember correctly. Basically, you plug in the A/V jacks into the capture card, plug the capture card into your computer, and record. If you wish to see what is happening on your TV while recording, however, you'll need a few additional things.
