    I won't do every single one haha, but try SDoom's Viewtiful Joe over Captain Falcon.  He is balanced and very fun to play as!

    I haven't tried it personally, but from the videos the SMBZ Mario does look pretty epic and balanced.  Also I've heard EternalYoshi's Grey Fox is excellent and well balanced (which you can find here in the Vault). It goes over Metaknight if you're cool with that.

    knuckles over pikachu, cloud over dedede, shadow over dk, scyther, snake unleashed + master chief skin over snake, viewtiful joe, ichigo over metaknight, sephiphorth over ganondorf, sora over marth, wisp or tails over jigglypuff, ridley over charizard, mewtwo over lucario, naruto over ike, aang over ness (no texture though), that top downloaded guy over lucas, zero over link.. thats all i know
