You're asking how do you replace the extra stages in the stage roster expansion pack? Well, just find the STGCUSTOM#.pac file you want to replace, get your stage you want to replace it with, rename it to the same name as the old pac and replace it with it.

For music, you would need to use the Tracklist Modifier code. It allows you choose what songs are played on what stages.

And about the icons and portraits, I don't think you can change them to custom ones.
